Caprisse Johnson is a senior at Murray State from St. Louis, Missouri. She is graduating in May with a Bachelor of Science in Dietetics. Dietetics is the study of nutrition from a scientific perspective and how it affects the overall health of individuals. This interview discusses Caprisse's research presentation, "The Sensory and Textural Evaluation of a St. Louis Style Butter Cake made with Greek Yogurt as a Fat Replacer," as well as her experience at Posters-at-the-Capitol.
